Mini Spinach & Goat Cheese Frittatas
Monday, March 30, 2015Since I can remember, having an egg dish has always been a staple at Easter brunch. With a little twist I decided to take a classic and make it mini!
Ingredients:
- 8 large eggs
- 1/4 cup chopped spinach
- 1/4 cup crumbled goat cheese (my fav!)
- 1/4 cup shredded Parmesan cheese
- Salt and pepper to taste
Instructions:
- Preheat the oven to 350 degrees F.
- In a large bowl, whisk together eggs. Add the chopped spinach, goat cheese, and Parmesan and whisk to combine. Add in the salt and pepper.
- Spray a muffin tin with non-stick baking spray and pour in the mixture about 3/4 of the way.
- Bake for 10-15 minutes until the eggs are set. Makes 12.
These little guys turned out so light and fluffy and the best part is, they were so quick and easy! I can't wait for Easter brunch this Sunday and whip up another batch for our guests!
