Mini Spinach & Goat Cheese Frittatas

Monday, March 30, 2015

Since I can remember, having an egg dish has always been a staple at Easter brunch. With a little twist I decided to take a classic and make it mini!

Ingredients:

  • 8 large eggs
  • 1/4 cup chopped spinach
  • 1/4 cup crumbled goat cheese (my fav!)
  • 1/4 cup shredded Parmesan cheese
  • Salt and pepper to taste
Instructions:
  1. Preheat the oven to 350 degrees F.
  2. In a large bowl, whisk together eggs. Add the chopped spinach, goat cheese, and Parmesan and whisk to combine. Add in the salt and pepper.
  3. Spray a muffin tin with non-stick baking spray and pour in the mixture about 3/4 of the way.
  4. Bake for 10-15 minutes until the eggs are set. Makes 12.

These little guys turned out so light and fluffy and the best part is, they were so quick and easy! I can't wait for Easter brunch this Sunday and whip up another batch for our guests!

Gold Leaf Easter Eggs

Monday, March 30, 2015

Easter is this weekend so I think its time to start decorating some eggs! I first used gold foil sheets over Halloween on a few mini pumpkins and I couldn't wait to foil something else! So here it goes...

Supplies:

  • Carton of Eggs
  • Pack of Martha Stewart Foil Sheets, (Copper, Gold or Silver)
  • Gilding Adhesive. I used the Martha Stewart Brand
  • Paint or dye kit
  • Paintbrushes
  • Paper to protect work surface

Step One: I usually dye my Easter eggs with those kits you find at the grocery store but I had some new paints I wanted to try so I decided to use them. Using a foam brush paint the surface of the eggs and let them dry completely. I love the colors but let's just say that dying them is a lot easier than painting them :)

Step Two: Apply the gilding adhesive and don't worry about coating the entire surface of the egg since we are going for the speckled look. Wait for the adhesive to go from wet to tacky.

Step Three: Take the foil sheet and press it against the egg and move it around until the desired surface of the egg is covered.

The gold foil gives the eggs a touch of glam, and I couldn't be happier with how they turned out! Happy foiling and Happy Easter!

Stitch Fix #2

Friday, March 27, 2015

This week I received my second Stitch Fix and I have to say that there is nothing better than coming home after a day at the office and seeing a package waiting for you. Here is a look at what my stylist Janessa picked for me!

1. 41Hawthorn: Teresa Colorblocked Sleeveless Blouse $48
I love this colorblock tank with the exposed half zipper in the back. It was slightly too short but I can make it work!

2. Level 99: Giovanni Straight Leg Jeans $98
Straight leg jeans just aren't for me but I like the color.

3. BRIXON IVY: Jarred Lace Detail Cap-Sleeve Blouse $68
The length on this top is spot on and I love the lace detailing. It would be great for the office or date night.

4. Fun2Fun: Tiana Crochet Bib Top $38
I LOVE the damask pattern on this top. Not only will it be cute with a pair of jeans but it can also work tucked in to a solid color midi skirt!

5. Eight Sixty: Alegra Dress $54
This dress is the right style for my body type but the fabric was a little clingy.

I am going to make some updates to my profile for my stylist and I can't wait to see what Stitch Fix sends me next month!

Blush Crush

Tuesday, March 17, 2015

Blazer: Forever 21, Jeans: Old Navy (only $34), Top: an older style from LOFT, similar here and here, Bag: Tory Burch, Necklace: Stella & Dot, Earrings: Stella & Dot, Sunglasses: Toms, Sandals: Tory Burch

In my opinion there can never be too much pink! The more the better is what I always say! This blush blazer is perfect for a casual Friday at the office or just out and about. I love that the cut gives it a little edge! And can we just talk about this purse for a sec? It is probably my favorite bag I have ever owned! I've had my eye on the Robinson Tote for awhile now and when I saw this new rose color, I just knew I had to have it! It is the perfect shade of pink for a bag! I LOVE these jeans from Old Navy. They fit so well and are such a steal right now for $34.

Thanks for reading!
