Peanut Butter Overnight Oats

I absolutely love anything with peanut butter, it is my weakness! So when I came across this recipe for peanut butter overnight oats I knew I had to give it a try! This is one of the easiest recipes I have ever attempted and I am all about keeping things simple. It is a healthy balanced breakfast that is also satisfying and curbs hunger until lunch.

Ingredients:

  • 1 cup Old fashioned oats
  • 1 cup Unsweetened almond milk or low-fat milk
  • 1/2 cup Plain low fat greek yogurt
  • 1/4 cup Protein powder
  • 2 tbs Peanut butter
  • 1 tbs Sweetener (or to taste)
  • 1/4 tsp Salt (or to taste)
  • Chocolate chips (optional but why not!)


In a small bowl, combine all of the ingredients together and separate between two containers. Melt the peanut butter 20-30 seconds so it is easier to mix. Cover and refrigerate overnight. If you don't have all night to wait, make sure to refrigerate for at least an hour. If you want, top with a few chocolate chips! Enjoy cold or warm!
